AG30 - Altbier (ish)

Post by serum » Thu Apr 21, 2016 10:35 pm

This is the last beer I'm doing with WLP011 before it gets too hot to use it. I thought I'd do something different and make something similar to an Altbier. I've only tasted a few of these but I really liked them and the ingredients aren't so different to my recent brews.

Estimated OG: 1.048 - Actual 1.046
Estimated FG: 1.010
Bitterness: 43.7 IBU
ABV: 5.0%
Colour: 26.4 EBC
Yeast: WLP011 European Ale

MASH - 60 mins @ 65C

4.7kg Munich Type 1
200g Caramunich
50g Carafa I

I went for a balanced water profile with about 65ppm Calcium, 65ppm Chloride and 70ppm Sulfate. I hit pH 5.5 without any treatment which is the same as last time I did a beer that was nearly all Munich malt. I think that's perfect for the water I use which is just as well as I love the stuff.

I also boiled just over a litre of wort down as a quick and dirty way to get some more unfermentable sugars in there. It's worked well on the last few brews so thought it'd fit in here.

BOIL - 90 mins

20g Spalt Select (4.4% AA) FWH
60g Spalt Select (4.4% AA) @ 60 mins

I ended up with gravity 2 points lower than it should be but that's still within style. It should be as close to a session beer as I'll ever get and a good way to use up all the 500ml bottles I've got.

Looks like a solid recipe to me. Don't sweat 2 points, I have an alt lagering right now that was 1.046 (1.010). I fermented it with Safale K97.
I'm just here for the beer.

Yeah 2 points out is nothing really. I was aiming for almost the strongest the style should be so I'll end up in the right ballpark.

It got down to 1.011 and I've bottled today. I had a little taste and it seems nice enough but very hard to say until it's carbed up and has had more time to rest. The colour looks good and I got a good bit of bitterness but I find it takes time for all those flavours to blend together nicely.

Looks like a great brewday. I've got a soft spot for alt beer any your recipe looks tempting.
