Rye Hoppy Ale

Put on a mash tonight for a pale malt and crystal rye ale.

Gone for an overnight mash.... Yes start telling me what issues I will get, just thought about cropping down on the time spent on the brewday.

Malt:

3200g Pale
500g Crystal Rye

Looking for 23L at around 1.034/6


I am gonna hop the crap out of this, but not decided on what with. Pictures to follow.

Interested to see how the overnight mash turns out, have been thinking about it recently. Wasn't sure what stage it was best to leave it at:
1) Mash in, leave overnight then sparge in the morning?
2) Mash in with a full volume, leave overnight?
3) Mash, sparge then drain to boil kettle and boil the next day?

Interesting read Wales. With such a high proportion of crystal I was kind of hedging my bets on the thinning of the body not being an issue. However didn't think about the lactic side of things.

Tasting it this morning it seemed fine. However have to wait for the finished beer to see if there is any differences.

Went for 20g of Cascade (flower) at 60mins and 50g of Simcoe and 50g of Chinook pellets at 5 mins. I have a slack hand full left for dry hopping too.

Ended up getting 22.5L at 1.040, but as I didn't want to alter the IBUs or colour I stayed away from liquoring back.

Really difficult to get the wort down to pitching temperatures. Got there though and its gassing away at 17C.

Ah, John, forgot that.... S05. I couldn't be bothered with liquid on this one. Wanted something clean.

Two weeks in and I had a sniff. Hoppy, very hoppy. Hmmmm.....

What the hell in went 50g of dry hops. I predict hazes!

Dropped the temperature down to 17C.

Just got this out of the secondary.... which was a good call for dry hopping with pellets. Lots of matter and yeast has dropped.

8 bottles and a conry packaged. Had a little sample, and pretty good, maybe great. BUT the bitterness doesn't lend its self to easy drinking.

Hope a bit of conditioning makes it less hoppy/bitter. Lets see.
