AG27 - Witbier

Post by Scott-westy » Wed Sep 07, 2016 8:34 am

Keeping it simple. I loved the last one I brewed and this version is even more basic. Just a bit of lager, wheat, magnum, orange peel and coriander. First time using the MJ Wit yeast. Cooked it up yesterday and cubed it. Easy brew. Getting kegged.

Nice.

I recommend next time replacing the wheat malt with flaked wheat, or if you want to be truly authentic you can use unmalted wheat and do a cereal mash first. It'll give you the right wit mouthfeel - wheat malt comes out too thin for me. A touch of oats doesn't go amiss too.

If M21 is the same as WLP400 then expect a huge krausen and a massive mess in your fermenter.

How does this yeast taste? How does it compare to hoegaarden?

Well I don't know yet. But the sample was certainly less floral and perfumed than Hoegarden. More classic banana and spice.

Such a simple beer but damn tasty and refreshing with a segment of frozen orange.
