Three S amber

I brewed this Wednesday
three S amber
3 gallons, O G 1.055, IBUs 43, SRM 13-14
5 pounds Gambrinus ESB malt
1 pound Irish pale ale malt
8 ounces Briess goldpils vienna
8 ounces carawheat malt
8 ounces Briess crystal 80 malt
3/4 ounce saphir @ 3.8% to FWH
1/8 ounce summit @ 14.2% for 45 minutes
1/8 ounce simcoe @ 12.2% for 45 minutes
3/4 ounce saphir @ 3.8% for 45 minutes
pinch of irish moss for 15 minutes
1/8 teaspoon nutrient for 10 minutes
1/8 ounce summit @ 14.2% for 6 minutes
3/4 ounce saphir @ 2.5% for 6 minutes
1/8 ounce saphir to steep
3/4 ounce saphir to steep
4 ounces demerara sugar
1 pack S-05
3 1/2 ounces corn sugar to prime
I pitched the yeast at 2pm and it was burping along every 4 1/2 seconds by 7am on Thursday.
This turned out really good the first time I brewed it.
I switched from crystal 20 to 80 to get a darker amber color. I also used maris otter the first time. I only used the different base grains this time because they are what I had on hand. I added the sugar this time as I ended up with a slightly lower O G than I was expecting.
