AG#28 - Fool's Pale Ale (NZ)

I've been wanting to brew something with some NZ hops for a while, so I decided to brew a very pale APA style brew that should be good for late spring/early summer.

I was aiming for 23L @1.048, but ended up just short with 22.5L, so quite happy with that, as I wasn't totally sure how much wort the hops would absorb.

I have used some low colour Maris Otter Malt for the first time, as I wanted to keep things as pale as possible. I have also used a fair percentage of Caramalt, because I have noticed that Brewdog do this with quite a lot of their hoppy pale ales, and I assume that it helps balance the hops without adding too much flavour and colour.

I missed my mash temp by 1C, so it started at 65C instead of 66C and the mash seemed to be draining really slowly when sparging, but this wasn't a bad thing as my mash efficiency was up to 82%, so all good.

I rehydrated 10g of Mangrove Jacks M44 West Coast yeast in 100ml of water @32C for 15mins and then brought it's temperature down gradually to 21C, by adding the contents of my trial jar back into the mix. This was then all pitched into the my FV which was also at 21C at 11pm tonight.

Fingers crossed that this will be bubbling away within 24 hours :)

Snap. Did almost exactly the same thing on Friday. Unfortunately I ran out of MO and had to add a kilo of Vienna to hit my abv target, rest is the same. My NZ hops are Kohatu, Pacific Jade and Nelson Sauvin, the latter being used as a dry hop only. I blagged some yeast at Hook Norton when I was on the tour the previous week so have pitched that. Took off like the proverbial and reckon it will be done this morning, got to love fresh brewers yeast.

You can't go wrong with Nelson, I may dry hop mine depending on how it tastes / smells, but i shall wait and see once it's finished fermenting.

Don't know much about them either, will let you know once I taste it, probably some time next week.

I guess you might consider Hook Norton to be small, but what a fanatstic example of a late Victorian brewery it is. Thoroughly recommend a visit, fantastic people. 2 hour tour, drink what you like and they even gave me some yeast. Can't say fairer than that.

I checked the gravity on Sunday morning and any activity from my blow off tube had ceased. The gravity measured 1.013, which I thought was a little high, so I upped the temperature by 2C to 22C and sealed the FV back up.

This seemed to bring the brew back to life, as over the next 2 days there was a steady bubbling again. I checked the gravity again last night and I was surprised to see that it was down to 1.008, now lower than I was expecting :-k

I'm now hoping that this was due to my lower than planned mash temperature of 65C, coupled with the hungry M44 yeast and nothing more sinister.

The gravity sample smelt and tasted ok, if not as hoppy as I was hoping, so I decided to go for a dry hop with the remaining 30g of each Cascade and Wai-iti.

I've dropped the temperature down to 18C now and will leave the hops in until Sunday, when I will hope to bottle and keg if everything is stable.

1.008 (same :D ) means mine will be 4.2 %. I mashed at 66c so can't complain.

This brew hasn't quite turned out as I'd hopped, but saying that I have been making regular trips to my keg in the garage in this hot weather.

It is certainly very refreshing, if not a little bit more bitter than I wanted and the hops aren't as powerful as I was expecting either, considering how many that I used.

I suppose the relatively low FG has removed some of the malt sweetness that may have balanced the overall bitterness.

On the nose there is mild citrus and the taste that follows, is gentle malt, mild citrus hop flavour and then a crisp bitterness that for me, overpowers my taste buds slightly.

It certainly looks the part and I keep getting envious looks from my neighbour when I appear from my garage with a refreshing looking beer in hand! 8)

I brewed a Citra version of Dennis King's Galaxy Delight yesterday, so it will be interesting to see how these brews compare.....

Yeah, I'm thinking I had the same issue too.

Both of my 100g packs were sealed and stored in the freezer, but the Wai-iti were 2014 and even though the Cascade were 2016, they didn't excite me when I opened the pack.

The 2017 Citra pellets that I opened yesterday for my latest brew filled my kitchen with amazing aromas, and even though they were covered in clingfilm while they sat in my brewshed waiting to go into the boil, their aroma was still escaping :)

Note to self - stop ordering so many hops and not using them quick enough! #-o
