I had myself a brew day today, attempting a 1 gallon batch of this recipe -

Dividing the malts by 5, I used
365g Pilsner
365g White wheat
Guessed the reduced mash volume, and mashed in 2 litres, sparged with 4 litres.
7g Amarillo @ 60
7g Amarillo @ 15
1/2 teaspoon yeast nutrient @ 10
Cooled and pitched 1/2 packet of SafaleUS-05. Ended with about 4.25 litres in the demijohn.
My understanding of the recipe is that I ferment it then after a week or so I rack it onto the fruit in secondary.
Any thoughts, tips or advice??

I added the pineapple and coconut yesterday. Was nervous about how I’d filter the fruit out when bottling so decided to put the fruit into mesh bags and I put the bags into a clean glass demijohn and syphoned the beer on top. Was left with an inch or so of space at the top. Secondary fermentation seems to have started this afternoon, but the beer almost seems to have increased in volume - spewed out the airlock - and now the beer itself has filled up the top inch - no space at all for bubbles or foam!
I cleaned the airlock and had to pour out a wee bit of the beer cause I couldn’t get the bung back into the bottle as the beer was up to the rim.
