Lockdown number 3

I decided to revisit an old recipe yesterday to get my stocks up.

Boiled the carbonates out of the water the night before. Went from 230ppm down to 38ppm as CaCO3. First time doing this, and something I will be doing again.

Prepped the malt and the hop mix also. The most stressful part of the actual brewday was to click switch on the HLT!

Recipe.

"Mojo's return"

Batch size 26 litres, 1040 (a little high), ibus somewhere around 40 and colour pale/golden.

4620g Pale malt
96g Extra dark crystal

64c mash, 60 minutes, 70c for 15 minutes.
90 minute boil.

100g of hops in at 10, 5, and 0 minutes.

Hop mix: fuggles, Apollo, cascade, Chinook, progress of unequal amounts! A bit of a user-upper.

Yeast S04. I would have preferred something cleaner but a starter I had on the go of a previous yeast smelt a little strange.

Currently bubbling away at 19c in the temp controlled fridge.

I do hope so. I will be disappointed if it doesn't pack a hoppy punch.

It seems to be coming toward the end of the violent fermentation now. A couple of releases of gas through the air lock per five or so minutes. So I have upped the fv temp to 19c.
