Høg Norsk Europe pale ale (not a kolsch)

Post by leedsbrew » Sat Sep 05, 2020 1:53 pm

An impromptu brew day today as the work I was expecting didn’t materialise.

I decided on something simple, akin to a kolsch /hybrid blonde to see what the Høg Norsk brings to a beer.

I was out of Vienna malt, but as it’s not technically a kolsch any way, I went for a splash of caravienna instead.

I was a touch under my predicted pbg, but then I realised I’d left the mash efficiency set to 85%, when I usually get 80%. Nice to be using beeralchemy again. Couldn’t get on with brewers friend.

No real Krausen this morning but positive pressure on the airlock. Not quite the raring start others have seen from CML yeast. This is fermenting on the cool side at 18oC though.

Sample out this afternoon. Down to 1.008 so 80% attenuation. Still yeasty but tastes very German/Nobel lagery! Very happy with it!

Sample again this am. TG reached. Set the fridge to crash cool down to 3oC. Hopefully will be kegged on the weekend as I will need the fridge back for fermenting Monday’s planned brew

GW'S sweet pale Ale profile is one that I use a lot for a variety of beers , very adaptable to many styles .

Yeah, I find myself using it quite a bit now I’ve moved. Seems to be quite good for use with my hard north yorks water

Well, after a week ish in the cold, this is tasting very nice. Clean, but with a slight ale eater. Tastes very German/European ale. Slight lagery. I’d like to maybe swap out the bobek for maybe a hallertau or a saaz addition to see how that goes.
