a change of plan

im looking at changing my basic recipe and wonder if somone can point me in the right direction.
most of my brewing is done in batches of 20 litres, the base of which is 2kg of lme,and between 250 to 400g speciality grains(steeped at 70c for 30to 60 mins)
although i check my worts,im not the most confident with a hydrometer,
if i lower the ammount of lme to 1.5 or 1kg ,how much more whole grains do i need to steep?
ive always thought the best way of learning is to experiment.

(if anyones interested)
fermenting,black rock stout
brewfem triple
conditioning, hamblten bards old english
irish red ale(own recipe)
heffeweisen with a twist

sounds reasonable enough,
but how far can treach the gap until im all graining,
if i want to use 1kg how much grain is needed if its possible
