yeast for stout

Hello everyone

just getting myself sorted for me first extract brew :D I have a recipe from daab. Cheers me old fruit cake.

based on Wheelers Muprphys Stout recipe.

2250kg pale lme (or 1.6 kg lme/1 tin + 520g dme or 1.8kg dme)
400g roast barley
80g chocolate malt
550g sugar

29grams of hops

I was thinking of just making up 2 and abit gallons.

Now what would be the best yeast to use and do i use the hole packet of yeast(6grams) or do have to half it like i would the recipe?

Gervin Yeast for me every time with a stout. I use 11g in a 1044 23 litre stout so 6g should do a moderate 2 1/2 gallon.I did try the liquid irish yeast once but I wouldnt bother uaing one on a small volume as they are too expensive.

Why not give S04 a try, it doesn't attenuate as far as Gervin and should leave a slight residual sweetness and a touch more body

I think Nottingham/Gervin, or US-56 would be a good choice for a dry stout.

Great one lads, Murphys always reminded me of lickerish so think i'll go with j p's choice.

One other thing !!

Hops - i was going to use Brupaks Northdown what do you think?

I presume you are only doing one copper hop addition, i imagine they would work great :D

I'm abit new to this delboy, I was just going to had one lot of hops so i would be ok with my choice?

I use Northdown in most of my stouts, it works well. SO-4 is also a good choice of yeast

I've ordered the yeast s04 and hops northdown today :lol: , just got to sort the equipment out by next week :shock:

Just chuck in the whole pack - don't bother splitting it. I use 2 packs in every 5 gal brew up to 1050 anyway. You're more likely to get a thorough trouble free ferment, with nice unstressed yeast and no off flavours as a result.

Dry stout -Nottingham
Off dry - SO4, Windsor, etc

Hops - doesn't make much difference if you stay off the weird and wonderful ones. Classic UK varieties are fine. Stout character is about grain, roast malt flavours, and bitterness The thing is, you only want bitterness from the hops so late flavour additions are not desirable so all the hops go in at the start of the boil and as almost all the hop flavour and aroma gets boiled off in a 90 min boil, it doesn't therefore matter much which type you put in as long as you get the bitterness you want. Northdown, Challenger, Fuggles, Goldings, WGV, Brewer's Gold etc, - doesn't matter. Guinness use Northdown and Goldings afaik.

I fairly recently won a club Dry Stout competition with one that had Saaz in. Nobody noticed . :) It's what I had in the freezer.
