First Attempt

I want to try my first attempt at a basic extract brew.
I'm aiming to follow the Exmoor Gold recipe from hop&grape with the changes for a smaller batch and extract style in brackets.

Brewlength: 23 (10) ltrs
OG: 1045 (1.041)

Pale Malt 4,600gm (Pale Malt 200g - Torrified Wheat 50g)
(Pale DME 1kg)

Start of boil
Challenger Hops 50gm (25g)
Fuggles hops 21gm (10g)

Last 15 mins of boil
Fuggles hops 10gm (5g)
Golding hops 10gm (5g)
Irish moss 10gm (0g)

Mash schedule (66 degrees C) 90 mins (Minimash Pale Malt & Torrified Wheat)
Boil time 90 mins (Half DME added and half into FV)
Racking gravity 1010 (1.019)
Alcohol content 4.70% (4.10%)
Bitterness units 40 (64?)
Colour 8 EBC (11 EBC)


I did this in beer engine so its only an estimate, however the bitterness units seem a bit out.
Does anyone know if they are both EBU ratings as this has me a bit confused?

Generally does it look about right, just want to make sure i'm not making any obvious errors.

Well i bit the bullet and went for it.

10L Brew Length

1kg Pale DME (500g boiled for 60 mins in 4l water)
*200g Pale Malt
*50g Torrified Wheat
(*mashed at 65deg for 60 mins in my flask!, then batch sparged 4 times and added to boil liquor)
100g Honey (added at 30 mins)

20g Challenger - 60mins
10g Fuggles - 60mins
5g Fuggles - 10mins
5g EKG - 10mins

Remainder of DME added to FV with some of the boiled wort.

Majority or wort cooled in sink full of ice packs.
Made up to 10L in FV.

OG 1.039 - (beer engine said 1.044 - but not too bad with my mash technique i guess)

Tasted pretty good - nice hoppy bitterness.

Fingers crossed.

Bottled this last Wednesday with FG 1.010

10L primed with 75g brewing sugar.

Opened one to check the progress :lol: last night and was pleasantly surprised.

Nice carbonation, clear as a bell with head retention all the way down the glass.

It could maybe do with a little more bitterness for my taste but i was pretty chuffed for my first extract.

I'll post up a pic when I get the chance.

Nice one Cleggy. Fuggles, Challenger and Golding - perfect combination.

I would back off on the priming sugar though. 75g is enough for a 5 gallon brew IMHO. If they are nicely primed after a week, then it might be like opening a bottle of Moet after a month.

Beer engine uses EBU (european) bitterness units which is the same as IBU (international) as far as I know. The bitterness units come out at 71 EBU on beer engine which seems very high. I'd aim for 25 - 40 EBU for an OG about 1045, but if it tastes right then it is right. It looks like you're on the slippery slope to AG.

Yeah - i got myself well and truly confused with the hops and beer engine and ended up scaling down from the original recipe.

Its a good excuse to make another batch up though! :D

I primed based on what I did with my Fixby Gold kit which carbonated just how I like it, but again trial and error.
To be fair I don't think it will last long enough to develop into a fully blown Moet!

You guessed right, I'm already sliding - got a couple of 60L barrels being picked up this week to make my HLT and Boiler. Coolbox is under the stairs, just need to work on my electrics and plumbing now! :=P

Don't know if its luck or the simple recipe, but this extract tastes a lot cleaner than all the kits i've done.
