Hello
I've got a selection of yeasts and I'm wondering which one to use for a Deuchar's IPA.
The choices are:
S04
UK05
Windsor
Nottingham
Gervin, maybe at the back...
I hope this is the right section of the forum for this question. The yeast bit looked a bit intimidating and I feel a bit of a novice clutching my paper sachets.
Any thoughts would be well appreciated.

Hi,
I made this recently (drinking now) and used SO4, but I think Nottingham/gervin would also have been suitable...
I will make this brew again and may use nottingha,/gervin next time...
Let us know what oyu go for and how it turns out

Deuchars IPA getting a bit obsessed with this brew myself lol i have tried S04 in my previous two attempts V3 is in the fermenter at the moment using Gervin its been a very slow ferment 7 days so far so i dont know if its a good sign or a bad one
S04 worked well as allways but the brew lacked something hence the Gervin trial will let you know how it goes

Just as an aside, Gervin and Nottingham are the same strain.

Even if you don't exactly match Deuchar you'll still end up with some good beer: always a good thing.

My three previous brews have been with Gervin. I leave my primaries for two weeks so when it continued bubbling for a whole week I thought it was great (it is the crowd-pleasing part of the process, afterall). I've started whisking the wort before pitching the yeast with one of those handheld blender things. Wondered if it was that that kept the fermentation going for a week. Thanks for letting me know that Gervin and Nottingham are the same strain EoinMag; very helpful.
I think I'll use the Nottingham as the S04 may be needed for future brews. Brew day tomorrow; first of the year. I'll try and remember to take some pictures this time. Always forget until half-way through the boil when things ease off a bit.

Things are going well this end with the Nottingham.
The magic started soon enough with a fantastic head forming on the brew. I then whisked it vigorously again on GW's advice. Usually this takes the thick head away and it doesn't return, but this time it's well and truly back.
It also smells very nice; even a bit like Deuchar's, if I may say so myself.
Again, lads, thanks for the help. Looks a belter!

I got this bottled on Tuesday evening after two weeks in the FV and it's lookiong very positive. There were various bits that didn't make it into bottles and they were very easily quaffed. I never normally sample too much of the brew at bottling but this was stupendous. Coudn't put it down.
The Nottingham worked wonders; thanks again for all the help!
