Harvey's recipe advice

Post by DaveyT » Thu Jan 27, 2011 11:26 pm

Howdy
Through all the usual trauma of deciding what I'm going to brew next, a ray of light may have reached me. I've found a recipe for Harvey's Best Bitter and want to make it as I was drinking it when I first met the good lady wife. I'm not sure where it came from originally, but it's in my notebook so I'm sure I've adulterated it enough for it to need help.
I'm scaled down to 12l and I boil for only 60min as I can't be @rsed leaving it any longer, tbh:

Volume: 12l
OG: 1.044
IBU: 32

DME: 1200g
Crystal Malt: 200g
Soft Brown Sugar: 100g

Hops
60m EKG 30g
10m EKG 10g
Steep EKG 10g

I've since found recipes for a mixture of hops but, like I say, I'm not sure where this all started out.
All help much appreciated; thanks in advance.

Have a search for Harveys in the search bar - loads there. I've got their yeast slanted and was excited about getting that 'Harveys taste' in my beers. Hasn't really happened though.

I really believe that the magical flavour comes from their yeast strain. My brews with this strain have all turned out fantastic. However, I've never achieved the Harveys magical flavour... Need to experiment a bit more with fermenting temps I think.

Thanks Floyd. I've looked through and found the original thread that I took this recipe from. It's in Norm's Almanac recipe thread. I've found numerous others, though.
I'm interested in trying out some single hop beers so I might stick with this recipe. Will it be any good if it isn't like the original? It sounds nigh on impossible to get near the original by the sounds of it.

I think it will be a nice ale man but it won't have a Harvey's taste. I will try to obtain their yeast again. I'm thinking that their yeast is combination of several strains and I only built up a single colony so only have one. That's just an idea though. They may well only use a single strain and I may well have it. However, I haven't managed that magical Harveys taste in the two beers that I fermented with it.

Thanks for the feedback. May well give it a go, anyway; thinking of trying single hop beers to get to grips with hops and their individual flavours. It'll at least give me a good EKG estimate if nothing else.
Could even repeat it with other hops if I was to be scientific, but that's for another thread.
Thanks again.
