Found out an old recipe for milk stout which I had much success with a good few years ago but it requires brown sugar, what can I use in it's place as the brown sugar does make it taste a little homebrewified, and there has been some advances since this recipe was written.

Normally the response would be to replace the brown sugar with malt but it is difficult to say definitely without knowing the recipe.

Yeah can you give us a gander at the recipe and we can advise, it'll normally be the amount of sugar which will cause homebrew type flavours. You can also invert the sugar and that effect will be a lot less. Best way though is to keep the amount of sugar to 10% or less of the overall grain bill. All it'll normally do in those quantities is decrease the body and increase the ABV some.

Damn that's a lot of sugar, it'll end up twangy alright, swap some of the brown sugar for malt extract, You don't want to go above about 400g sugar in that one.lad wrote:The recipe is for 23ltrs
