Is the competition anytime soon? Is it worth making a couple with slight differences along side each other then deciding on something from the results?
Thinking about the yeast; I've just done a porter-esque beer using Windsor and it came out great. Would the US 05 prove a bit dry?
As for the steeped grains, I'm quite green about those, I'm afraid.
