Hi
is it possible to successfully make a weissbier using extract? if so does anyone have recipes? on a slightly different subject what does torrified wheat do to a brew?

Sure you can. you need to use at least 50% wheat malt extract plus some form of pale malt extract. a smalll amount of german hops for around 15 EBU's and then most importantly a hefeweizen yeast. Danstar do a dry version but you really want to go for a liquid yeast for the best results.
I've never used torrified wheat before but I think brewers mostly use it to help with head retention. If you are using 50% + wheat in your beer though, torrified wheat won't be needed.
I know my answer is a little simple, I'm no expert after all. Maybe someone else will chime in with a little more detail...

At the moment, I'm brewing 7 litres of a weissbier with:
1kg Wheat malt extract
7 litres water
10g Hallertauer Hersbrucker - 60 minute boil
10g Hallertauer Hersbrucker - last 15 minutes of boil
10g Crushed corriander seed - last 15 minutes of boil
10g Chopped orange peel - last 15 minutes of boil
Brewferm Blanche yeast
1kg Wheat malt extract
7 litres water

wow Ive heard coriander is used, seen it on sale in home brew shop, what does orange peel do, just flavour? can I use fresh peel? sorry loadsa questions!

Yes, flavour. I used fresh peel. If you can, get unwaxed or just scrape / scrub the wax off.

By the way, if it contains Orange peel and Coriander then it's not a weissbier in the German sense, it's a witbier, from Belgium. The names mean the same but the style is not necessarily.

Hi all, made Cheshire cheese's brew above, just had sneaky taste at bottling stage, tastes great! I suppose I'll have to leave it alone for a couple of weeks

yes not touched it yet, ironic thing is, its crystal clear, some brews you want clear remain cloudy. but i'm not gonna try it till easter, my mate's a wit bier fan and I'll let him judge.

I may be wrong but I think that white beers can settle clear, just need to swirl the bottle with the last little bit to re-suspend the goodies.far9410 wrote:...it's crystal clear...
