I hope to do my first extract brew this or next weekend but seem to just keep coming up with questions so thought I'd start a thread to ask them in. (a whole thread may be better than the 56 for each question)
1,Can you save malt extract once its open? most brews seem to want one and a bit tins and I'd hate to waste £6 ish each time I made a brew.
2, I've been reading Graham Wheeler's book, if I have read it right most extract brews are around a 90 min boil, the chap in my HB shop says its only 60, who is right?

1.You can save malt for a while after opening it, but it will not last forever once opened, maybe pour any leftovers into a freezer bag and freeze it to keep it at it's best. Consider using dried spraymalt to make up the odds as that keeps much better than liquid malt.
2.Both are right, but it depends what you want, 90 minutes gives a clearer beer with a better hot break and better hop utilisation among other things, that said, hot break should not be such an issue with extract from what I remember.
