Extract recipe anyone?

Post by sbond10 » Mon Sep 24, 2012 12:44 pm

After finally getting back into work I've been allowed to purchase a 19 litre pan so I just wondered if anyone could suggest a first recipe. Mr monkey brew suggested a while back when I had only a tiny pan I could try coopers apa with challenger hops added. But now I have a reasonable size pan on its way I thought a larger recipe could be planned. I'll be aiming for between 18-23 litres in the Fv
So the ingredients I have at hand or will have is
*coopers apa or 1.5kg light lme
*1kg of DME
100g of challenger hops
*a sachet or 2 of Goldings hops ( no idea of the size barneys sending me some in post)
*250g of blueberrys ( I can get more Missus wants a blueberry ale)

So I was planning maybe filling the pan with 15 litres of water.
Getting it to near boiling then adding etheir the coopers or the lme and half of the dme then get it boiling, add one or both the hops vairietys (maybe 30g ) rolling boil for 30 minutes add the blueberrys (which I will slightly mash) then in last 15 minutes add more hops. Whilst its boiling away I'll try to keep at 15 litres by topping it up etc. once cooled I'll add to Fv with the remaining DME and top up to between 18 litres and 23

So as you can see I vaguely know what I'm doing I just help with hop weights and timings etc. this is mainly for swmbo and she wants a nice blueberry notes with it not being too bitter( she loves coach houses blueberry ale)
So apologies in advance for the rather vague recipe but if anyone can help out with a proper recipe would be greatly thanked.
Cheers Sean and swmbo

A couple of things around the blueberries. First of all, you're gonna need more. If you want to use fresh blueberries then you need about a kilo for that quantity of beer to get a reasonable flavour.

Secondly - don't add them to the boil. Puree and then add to the secondary fermenter for a few days. Personally I'd go a step further and puree, then push them through a sieve to remove all the pips and pulp to avoid that stuff floating around in my beer. Some people also say that you should stick your fresh puree in the fridge mixed with some water, pectic enzyme and a campden tablet to help sterilise the lot and remove any pectin from the fruit (which causes pectin haze in the final beer).

Or take a much simpler route and (if you can find it) buy fruit puree or fruit extract, a lot easier than handling the fresh stuff as it doesn't need any of that prep.
Ingredients: Water, Barley, Hops, Yeast, Seaweed, Blood, Sweat, The swim bladder of a sturgeon, My enemies tears, Scenes of mild peril, An otter's handbag and Riboflavin.

I know blueberry concentrate is something daft like 30 quid a bottle. But I'll go look see if I can find blueberry purree as for the quantity I hadn't a clue how much to use so I just guessed. As for boiling them that was main reason to kill off any nastys but I guess I could do as you would dry hoping ?
What about dried blueberrys ?

Key thing with most additions to beer that aren't grain/hop related is to add them in secondary, and keep tasting it until you hit the right amount. Not enough can be disappointing and too much can be overpowering and unpleasant, so sampling when primary fermentation is done is the simplest way to figure this out. Adding the fruit in secondary will also give you a more pronounced fruit flavour.

If you boil the fruit it will add pectin to the wort, which at best will cause haze, at worst it may affect your fermentation. If you want to sterlise by heating you can pasteurise them by mashing/pureeing the fruit with some water and then heating the mixture to 75-80 degrees and holding it at that temperature for about 20 minutes.

Dried would probably need to be rehydrated a bit before use (or they'll suck up all your lovely beer!), but you could add water and pasteurise as above to achieve that.

Well asda has um in frozen should be able to get a kilo for less than a fiver. So do reckon I should wait for fermenting to completely finish then throw the blueberry juice in say 200ml a time or like dry hopping just wait till to krustation has buggered off. And how the heck can get the blueberry in without stirring.

Also do you have any clue on a recipe with my above stated Ingredients.
