
As the nights are getting darker and cooler, I decided to brew a fairly strong Porter.

1.500kg Light LME - 8 EBC
0.260kg Crystal Malt - 120 EBC
0.150kg Wheat DME - 8 EBC
0.100kg Dark Brown Sugar - ? EBC
0.075kg Chocolate Malt - 800 EBC
0.025kg Roasted Barley - 1350 EBC
17g of Cluster Leaf Hops 7.8%AA @60mins
10g of Cluster Leaf Hops 7.8%AA @10mins
10g of Cluster Leaf Hops 7.8%AA @5mins
Colour - 110 EBC
Bitterness - 37 EBU
OG - 1.054
FG - 1.012
ABV - 5.6%
Yeast - Gervin Ale (rehydrated)
Fermented @20C
This brew spent 16 days in the FV before bottling and I couldn't help myself last night and cracked open a bottle at only 6 days old!
Wow what a drink this is so far, it has a nice smooth mouth feel and a great, but subtle blend of chocolate, coffee and liquorice that finishes slightly sweet and fruity.
TBH, I hope it doesn't change anymore with conditioning because I'm very happy with what I've got right now. I suppose I could drink it all within a couple of weeks

Loving the simplicity of extract brewing right now, and I have a small batch of Ext #4 (Irish Red Ale)that is currently escaping from the FV aided by some rampant Windsor yeast!
