Gents,

I am considering my first extract brew and have a question regarding the boiling of the malt with the hops.

I am looking to use the brewuk 'way to amarillio' recipe as a basis which states the following:

'Bring 6 litres of water to the boil and dissolve the 1kg of malt extract and 30g of the hops. Boil for 40 mins then add the other 2kg of malt extract. Add a further 10g of hops and boil for a further 15 minutes. Turn off the heat and add a further 10g of the hops and allow to steep for 30 mins.'

When boiling, is it normal to lose a certain volume of water to the boil or do you have to maintain a volume using boiled water from the kettle?

You will lose water, don't top it up.

But you will need to top it up to the full final volume with cold water at the end.
Ingredients: Water, Barley, Hops, Yeast, Seaweed, Blood, Sweat, The swim bladder of a sturgeon, My enemies tears, Scenes of mild peril, An otter's handbag and Riboflavin.

Hi Barry44

You chose wisely with Brew Uk's way to amo recipe. It is easy and tastes fantastic. One of my regular ones. Jocky's reply was spot on. As a relitive newby Jocky has given me many good tips so he is worth listening to. I also liked the summer glow, spring ale and recently the wai-ti recipes from bew uk. All turned out great.

As Amarillo is out of stock everywhere i check, i intend to replace the amarillo with cascade pellets.

Do you think that this will make a decent brew?

Using brewmate, it appears quite similar in IBU, although the amarillo is slightly stronger.

I wouldn't say that amarillo and cascade will yield similar IBUs - Amarillo has about 50% high AA than cascade so you will have to adjust accordingly.

Its a good substitute though and you will end up with a nice beer.

Not sure mate but why not give it a go and let us know how it goes. I am trying the 'witches pendle' recipe pack tommorrow.
Shame about brew UK at the moment, a lot of stuff is out of stock.

You could do a lot worse than a cascade ale. It should be awesome!
In terms of working out different quantities because of different AA %, do you have the software to do this with? Apologies if you do and this sounds a tad patronising!

Hi Davey, i am using brewmate which allows you to create a brew via the fermentables and hops etc.

I think i am doing it right in there but there are a lot of settings for all grain which i haven't touched!

Don't worry about being patronising, i am after all the help i can get!!

Further to my previous post, i have managed to get some amarillo hops and am looking to do the way to amarillo recipe but am considering doing it to 10 litres rather than 20 as per the original recipe.

By altering the volume in brewmate, it automatically halves the malt and hops to stay at the same abv and bitterness, so all is good there.

I assume that you should halve the volume of water for the boil, i.e. 3 litres instead of 6 litres. Is this the case or would i lose too much to steam before the boil has finished?

Also, with regard to yeast. The recipe calls for a pack of S-04 yeast for the 20 litre volume, i assume that i can just pitch the entire packet to the shorter brew with no detriment to the finished beer?
