Rescuing an over-hopped beer.

Post by booktownman » Tue Dec 11, 2012 6:13 pm

I've gone a bit OTT with the bittering hops in my IPA and, sampling from the FV, the beer has an earwaxy finish.

Don't get me wrong, I like a lot of hops but this is hitting the back of the throat.

Any ideas for knocking back this over-bitterness? I was going to try priming with demerera sugar or even spraymalt in the hope of getting some caramel or maltiness back in there.

Advice would be much appreciated.

Thanks in advance,

BTM

I never judge from the fermenter. Hops tend to be harsher early on.
It will settle down as it conditions.

Hop flavour continues to fade in the keg / bottle, so in a month it will probably be lovely :)

What was the recipe you worked to?

Adding demerara or spraymalt for priming won't have much of an effext IMO.

If things don't improve you could try brewing up a less hoppy beer and then blending this with the over hopped brew...

Letting it settle a bit, or blending another ale in are both options - if I had more time. It's for supping over Xmas. I know, I know I should let my beers rest for longer, but...I do tend to dive straight in.

Any other ideas?

What I've done on occasion with beers I didn't like is mix them with shop-bought beer (a cheap can of bitter, say). If it's that bad might be worth a go! Waiting is probably your best bet though.
