Ext #5 - Jack & Pete's Mild

I have finally decided to brew an Extract Mild and this recipe is roughly based on GW's BYOBRA 3rd Edition Hop Back Mild.

I have named it after both of my late Grandad's, as they both past away in November on different years, and I suspect that they may have supped a few pints of Mild in their time :wink:

Jack & Pete's Mild

Brewlength - 22L
2.000kg Light DME - 10 EBC
0.170kg Crystal Malt - 120 EBC
0.120kg Chocolate Malt - 800 EBC
0.100kg Roasted Barley - 1350 EBC

22g of Challenger Leaf Hops 8.2%AA @60mins
11g of EKG Pellet Hops 5.9%AA @10mins

3g of Irish Moss @ 10mins


Colour - 89 EBC
Bitterness - 25 EBU
OG - 1.035
FG - 1.011
ABV - 3.2%
Yeast - Windsor Ale (rehydrated)
Fermented @20C

Brewday will be this coming Tuesday :)

Should be a decent pint, that. I've brewed the recipe twice. Always came out nice. Quite bitter for a mild but it doesn't mask the malt or make it any less drinkable

I am currently boiling this brew as I type, and have made a few minor changes to the above recipe.

Jack & Pete's Mild

Brewlength - 23L

My brew went fairly well on Saturday night but my OG was 1.032 instead of the predicted 1.034.

I also cocked up with rehydrating my yeast, because I started it off before I had finished the brew, and as I dilute my boiled wort with bottled water it ended up at a too high temperature to pitch the rehydrated yeast!

I removed about 300ml of wort and cooled it from 29C to 24C, which was the same temp as my rehydrated yeast and made a starter.

I then left my brew and starter overnight to cool in my kitchen. I finally pitched my starter the next morning at about 18C. I've just checked the gravity on day 4 and it's down to 1.006!

Certainly a fast ferment and a lower gravity than expected, but I suppose that's down to the Notty yeast.

Had another gravity check yesterday on day 7 and thankfully it hasn't dropped anymore.

I tasted the sample that has cleared a lot more and it was promising with a nice 'mild' hop flavour :-)

I'll probably rack this into a fresh FV today and then leave for another week before bottling/kegging.

I had my first pint from the keg last night and it was rather nice.

It is a little thin in the mouth, but it did finish at 1.006 so I was expecting that.

I think that S-04 would have been a better yeast choice, but I'll put that down to experience :-)
