Twang/Too Sweet?

Hi,

So just finally got a chance to try the two brews I did with LME as the base and using mashed malts for additions, i.e. a Bock and a Red Ale I did.
Both have had a month+ in primary (sadly didn't get round to checking FG but It should have had enough time and yeast to finish), Bock had around a month and a half/2 months down the cellar.

Just tried them after about 5 days in the bottle, just for the sake of trying them, and the Bock tastes very sweet and overly malty to me, which I wouldn't expect unless the LME didn't ferment properly or something similar. There is also a very minor extract twang smell to it, which I never got with my AG beers.

So is this just a problem with extract? Is there a way to remove this issue? Or is it just an age thing?

As If I can't figure out a way to fix this, I will be returning to AG as the extra time is feeling very much worth it right now, as waiting 2 months for a sweet bock feels rather lame.

I've not had any bad twang from my beers (but hey, that might happen with the one that's currently in the fermenter), but the general wisdom is that extract twang comes from old extract, and LME ages much faster than DME.

So I only use DME that's as fresh as I can get.

I bought a bulk 25kg of LME from Malt Miller and its really new, it was probably a month old max when I used it, as its dated October 2012. So I don't think its age of the LME related. The twang is very minor in the smell only, compared to what i used to get from kits its not even noticeable, and its only from doing kits that I know what the smell is.

When I was extract brewing I switched from LME to DME for that very reason, LME definitely has a twang compared to DME

Well I can't justify the price of DME vs AG, LME makes it closer the AG prices when bought in bulk, but if I can't get on with it. I will just either pad out with LME or sell it on here to someone.
