A question to fellow honeyheads
I plan on trying the Whitehouse Honey Porter mentioned a few posts above. The recipe calls for adding the honey to the wort and then proceding with the usual 60 min boil but I have read that whilst boiling gets rid of wild yeast and other nasties, it also effectively destroys the honey aroma you are trying to provide to the brew. What would be the appropriate alternative method? Add the honey in the last 5-10 mins of the boil?

I've tried St Peter's honey porter and that good. You can find it in the Norm's Almanac thread in the Recipes section.

Well, the porter is in the fermenter since tuesday night and after 5 hours the airlock was popping along, peak activity yesterday when it popped continuously every second of the day (I kid you not
). Slight drop in frequency today but still very vigorous. Is Nottingham yeast always so lively? I usually use SO4.
