I agree liquid malt is expensive, however once you have the confidence to extract brew to a good standard you can buy the extract in bulk and if looked after it lasts for ages.

If it's dry extract, a tupperware container or something similar is a good way of storing it. If it's exposed to moisture, it will turn into a solid block that can only be broken with a rolling pin or a hammer. I guess a packet of DME that is still sealed should be fine but be careful with any opened packs. I read on the American homebrew forum Homebrewtalk about brewers finding DME several years past their sell-by date that had turned into solid bricks but still brewed perfectly good beers. As for liquid malt extract, I hate dealing with it as it's messy and I never know what to do with the quantity that is left over. I have read that you could put it in a sterilised glass jar and keep it in the fridge/freezer till the next brew day. I've never done this but be warned, there was a post on here not too long ago where someone said their bulk buy of LME went moldy.
