Thanks for the heads up. I hadn't thought of that. I brewed on a Monday night, stuck the honey in on the Wednesday, then bottled a week Sunday. The honey had 11 days to sort itself out, but you never know. The sticky thermometer on the side gave a steady 22 C which I didn't have to fight to keep down (the Canaries aren't too hot at the moment).
My Spanish audience like their beers fizzy, but I don't want it on the floor! The bottles haven't had any problems and it's day six. Having said that, D-Day is usually day seven...
Hmmm... I'll keep you informed, and my fingers crossed.

Cracked open my first bottle last night. A few days shy of a month, I thought it was a little soon, but I've been getting impatient.
Myself and Goodwife DaveyT are very, very pleased with the results. The initial taste is honey yet not sugary at all, presumably as the sugar's all fermented out. The dark malt and hops then come up rather than a sickly sweet taste that I was expecting after the honey. Very pleasant it is, too.
Goodwife DaveyT said it tasted of a pudding but it's still light enough for a session beer.
I'll try and get a photo up. I'm still toying with the idea of brewing it without the honey with an OG of 1.044. The honey really benefits from the later addition, I think.
