How long must I wait...?

Hello all


I had an extract ESB clone attempt sit in the primary for 4 weeks, then in a secondary with finings for about 3 days before priming, re pitching (afeared the yeast may not be adequate) and bottled 4 days ago.

Would it be drinkable at this point or am I wasting a bottle if I open it?

Well, it is partially lazyness I guess, partially waiting for one of those squirty things to be delivered to aid in rinsing the bottles. I did read somewhere that one does not want to remove the beer too quickly, and that 4 weeks in the primary should not hurt the beer. (I think it was Palmers web site)

Problem is there is a bit of a drought in my place at the moment... dont want to do too many commercial beers :?

hmm...

well, I will pop a bottle when I get home and post teh results. I do expect an easy drinker as it was an attempt at a ESB, but my OG was way too low...

to follow up - I popped a bottle of the 'ESB clone - NOT' last night.

It was pretty much as DaaB said - quite drinkable, but fairly flat. Seems 3-4 days is not enough to carbonate the beer.

It was of course also fairly cloudy, and needs more time to mature.

Unfortunately it tis also a bit thin - it was at 1006 when I bottled it.

I list the beer as a 'ESB clone - NOT' for the reason that my OG was too low. Somehow I managed to mess that up and had 1040 as opposed to 1047 (or is it 1057). Next time I will cheat and add some DME to bring it up if required (I think you suggested that on my post about this brew DaaB).

I guess the lower the FG the thinner the beer?

Usefull to know about the crystal. It was in during the boil, but I have read somewhere that it should be steeped around 68 deg C as too hot and one extracts tanins. Any comment on that? Lines says the crystal should be in on the boil, but then our knowledge of what is going on has increased in the intervening 20 odd years. Or maybe the tannins are neccesarry for the clone?
