Crushed Amber Malt

My son bought me Dave Line's book Brewing Beers Like Those You buy and 2 kilos of crushed amber malt for fathers day I don't have my AG set up sorted yet, can I use the amber malt like I would crystal malt for extract brewing

Afraid not, you need to mash amber malt. Have a look here for a recent list of grains you can simply steep.

You would be correct, it's quite bitter and strong in flavour if you overuse it. Experiment but keep the quantity as a rule of thumb below ten per cent or so.
