I've made a few one can wherry brews before now with a kilo of DME. I like these brews because one can from a wherry kit only has half the hops for a full brew so you can experiment with different hops and additions on the boil and late on.
I made a right catsarse of my last brew though. I needed a new 5 gallon bucket to make some elderberry wine, so bought a brewbuddy starter kit from wilko's (two cans and a bucket for £20 can't be bad). I bought a wherry kit too and thought I'd mix it up a bit as I read the BB kit's not great, so I used one can of brewbuddy bitter and one can of wherry. I also threw in 50g of amarillo and bobek on the late addition.
I forgot that the brewbuddy can is hopped for a full brew. With this and the wherry and the late hops I think I've made a brew of about 60-70 EBU - double what I normally drink. It's just got down to 1014 so I tried some out of the fv and it nearly took the lining off my throat. Very bitter!
Can I make a brew up of just DME and no hops and then blend it 50/50 ?
Has anyone ever done this before?

Bottle it up, hide it away for a few months and call it an IPA

No problem blending the 2 beers either. I've not done it myself, but imagine you blend when the second fermentation is complete.
Re: Modified kit too bitter
Why do no hops? Go for something that will stand on its own as a nice beer but not very bitter using low hops and blend at point of serving 'to taste'. I've done this when I've had a super-sweet bock beer that stuck at 1.025 (from 1.070) so brewed a bitter dry one and blended at point of serving and made some nice beers.
bitterness will back off after time...

I agree. Hoppiness does fade.
Several years ago I got a so-so score in a compitition for a British style barleywine as it was "overly hoppy for the style". I entered a bottle from that same batch a year later and took second place as it was now spot on.
I'm just here for the beer.
