Murphys stout style recipe

Hello Their, recipe as follows

23L
1.8 pale dme
400g roast barley
80g chocolate malt
550g sugar
Progress hops 50g
yeast safale 04

og 1039
fg 1010

Hops are home grown and do i need to add anything else maybe flaked barley ?

Here's your recipe:

Size: 23 L
Efficiency: 75.0%
Attenuation: 75.0%

Original Gravity: 1.042 (1.000 - 1.100)
Terminal Gravity: 1.010 (1.000 - 1.100)
Color: 25.85 (0.0 - 50.0)
Alcohol: 4.09% (0.0% - 10.0%)
Bitterness: 34

Ingredients:
1.8 kg Dry Light
550 g White Table Sugar (Sucrose)
400 g Roasted Barley
80 g Chocolate Malt


Irish styled stouts usually have flaked barley. This gives body and helps aid a foamy head. However, I'd add 100g of torrified wheat as from experience, this gives a much better result in terms of head and lacing.

I would drop the sugar and up the DME. Sugar won't add flavour... it will just up the alcohol content. Would also up the bitterness. Here's what I'd do. Alcohol content is still the same:


Size: 23 L
Efficiency: 75.0%
Attenuation: 75.0%

Original Gravity: 1.042 (1.000 - 1.100)
Terminal Gravity: 1.010 (1.000 - 1.100)
Color: 25.96 (0.0 - 50.0)
Alcohol: 4.09% (0.0% - 10.0%)
Bitterness: 40.8 (0.0 - 50.0)

Ingredients:
2.1 kg Dry Light
400 g Roasted Barley
80 g Chocolate Malt
400 g Barley Flaked
100 g Torrified Wheat
60.0 g Progress (6.3%) - added during boil, boiled 90 min

Hello Floydmeddler

Finished boiling, cooled and have pitched yeast. gravity 1040-2 the old eyes seem to be letting me down abit but close to what we said. Need to sort a hop strainer had abit of a stopage !!

Thanks for the recipe adjustments, i'll let you know what it tastes like.

i put the grains in a muslin bag, but i put the hops in loose which was the problem.

I've been looking at diy hop strainers as well as fitting a second kettle element to speed the boil up.

How long did you steep the grains and at what temp?

Hop strainer is pretty simple to make and two elements really do come in handy! :-)

I steeped the grains for 30 mins than took them out, temp was around 65-70 degrees. :?

As you have some experience in brewing :lol: can you leave the grains in through out the boil or is their no point?

Never bring the grains up past 80c and certainly don't boil them as the husks will release tannins that will end up in your glass. Your temp was perfect. You need to get an all grain up next! :wink:

Think i'll get a few more extracts under me belt and than think about all - grain 8)

Just had a sly taste and it was pretty good, smokey with quite a bitter hop taste. The progress hops i used were home grown so i don't really know how strong or weak they are !!

og 1040 i measured it tonight and it was 1013-14 so a little longer before i bottle ? :?
