Wit extract recipe

What do you guys think of the following wit beer recipe?


3 kg. Dry Wheat Spraymalt
21 g. Hallertau Hersbucker (Whole, 4.00 %AA) boiled 60 min.
16 g. Saaz (Whole, 5.00 %AA) boiled 15 min.
25 g. Curacao Orange Peel (dried) (10 min)
14g Indian Corriander seed, crushed (10 min)
Yeast : Brewferm Blanche dry yeast or WYEAST 3944 BELGIAN WITBIER (haven't decided yet)


Boil volume 26lt
Fermenter 23lt



Not sure if I should switch some of the spraymalt out for some wheat LME. Would this be an improvement? :?:
Love witbeer and would be chuffed to produce a nice one at home :mrgreen:

Hi IrishEyes! Welcome to Jim's!

I'm no expert at wit (as you can tell from the crap joke thread in the tap room) but I think you want to go 50/50 with normal spraymalt. Never done an extract wit, but that's how I'd do a wheat beer with all grain anyway. Hoegaarden is 44% malted barley, 43% unmalted wheat, 8% malted oats and 4% unmalted oats.

Cool. Thanks HighHops - I'll have a think about replacing some of the wheat spraymalt with regular. I guess it'd be really 'wheaty' if I used all wheat? I'll have to track down some more wit extract recipes and see what they use. I'm really looking forward to giving it a bash in any case. Cheers
