A couple of recipe ideas..

Hi everyone,

I've done a couple of extract clone recipes over the last few months and while I really enjoy doing that I'd like to start designing my own brews, a beer that I can really call my own! So, I've knocked up a couple of things on beer Engine and I'd be interested to know what people think - are they likely to work ok!? I suppose more importantly, is there something there that looks like a terribly bad idea?

The first one, I'm after something fairly strong and bitter and quite hoppy - something nice for the summer! I'm thinking about putting some elderflowers in this one too - probably about 30g @ 30mins.

Fermentable Colour Grams Ratio
Dried Malt Ext. Xtra Pale 2650 grams 94.6%
Crystal Malt, Pale 150 grams 5.4%


Hop Variety Type Alpha grams Ratio
Fuggle Whole 4.9 % 90 mins 66 grams 53.3%
Golding Whole 5.7 % 10 mins 34 grams 27.4%
Golding Whole 5.7 % 0 mins 24 grams 19.3%


Final Volume: 19 Litres
Original Gravity: 1.050
Final Gravity: 1.011
Alcohol Content: 5.1% ABV
Total Liquor: 24.1 Litres
Mash Liquor: 0.4 Litres
Mash Efficiency: 75 %
Bitterness: 50 EBU
Colour: 11 EBC

The second one, I'm aiming for a stout / porter style dark beer, something a bit stronger.

Black Malt 1300 EBC 0 lbs. 3.5 oz 100 grams 2.9%

Fuggle Whole 4.9 % 90 mins 51 grams 71.7%
Golding Whole 5.7 % 10 mins 20 grams 28.3%


Final Volume: 19 Litres

Final Gravity: 1.015
Alcohol Content: 6% ABV
Total Liquor: 24.1 Litres
Mash Liquor: 0.5 Litres
Mash Efficiency: 75 %

Colour: 102 EBC

They both look really tasty to me! Never tried elderflowers in my beer, if you use them let me know how it works out! My only advice is have you tried oatmeal for a stout type beer adds an excellend smooth creamyness!

Oatmeal sounds interesting - I hadn't thought of that. What would be the best way of using it? Steep it along with the speciality malts before the boil?

I think I'll crack on with the summer brew next week when I've bottled what's fermenting now (I'd get another FV but living in a tiny flt my misses is already a bit put out by the 2 sitting behind the sofa bubbling away!). I'll post back how the elderflowers work out!

:),yeah i'm sure you can just steep it as a speciality, but i think really needs to be mashed to work properly, only time i ever used it was in a partial mash brew and it worked really well!

Hi

Yes you need to mash oats but I'm not sure about golden naked oats (crystal oat malt). If your mini-mashing, then all adjuncts are generally usable.
