contemplating fresh hops in a brew
so, i've done some kits and quite pleased with the results but i'd like to try fresh hops.
i've trawled through the recipes here and elsewhere and found many, but i'm easily confused and i don't wish to start steeping grains just yet
can someone let me have a recipe using dried malt extract, fresh hops, yeast and water that'll turn out hoppy, pale and 4 or 4.5%
i have a large (2gallon) pan & 5 gallon FV

100g Fresh Vacuum Packed Hops - Cascade (New Zealand) Alpha 7.6% - 2009 Crop
in 20 - 23 litre of anglian water's finest.
anyone got any comments or pointers?

Hi Hard Water,
I've been doing extract brews for a while now and don't use any kits at all. The results have been spectacular and I will never go back to buying a kit.
So, how are you adding in the hops? There are many recommendations but if you are doing a single hop brew then I would suggest, and please feel free to ignore and do your own thing, the following:
40g for a 90 minute boil as the AA is quite low so you'll want to get as much bitterness out as possible.
20g at 20 minutes from the end of the boil for flavour
20g at 10 minutes from the end of the boil for flavour
10g at 5 minutes from the end of the boil for flavour and aroma
10g at flame out (and when cooled down to 80 degrees) for mainly aroma.
I did something like this with Citra hops (different amounts, similar times though) and the result was wonderful.
Is that any help at all?
Dave.

Currently Drinking: Marris Otter with home roasted porridge oats, shredded wheat, crystal and black malt, EKG hops and Nottingham yeast. Smooth, dark, and rich - put some aside for Xmas.
Currently Drinking: Bohemian Pilsner with porridge oats, shredded wheat and basmati rice, along with Saaz hops, mandarin zest, coriander, cardamon pods and Munich yeast. Silky on the mouth with a wonderful summer taste. Love this brew!

Re: contemplating fresh hops in a brew
thanks dave, as i've really no idea and that your suggestion is quite close to the ipa and apa on this list...
http://www.howtobrew.com/section4/chapter19-3.html
means i'll follow your instruction to the letter and see what it's like at the end.
i'll report back in 4 weeks.
please could you share the recipes you've really liked the results of?

Its a slow forum for sure. Im new to extract brewing, well brewing in general as well and wish this forum had more action/recipes.hard water wrote:OK, so with having had no advice, i'm going to try

Anyway your recipe looks fine, and with Onlinedaves suggestions I think you will have a nice batch of beer.
Dont be afraid of steeping some grains, adds a really nice freshness to it, not at all that involved as well.
Re: contemplating fresh hops in a brew
oops, i forgot
- do the hops remain in for fermenting, or are they seived out?
it's been boiling for an hour, btw

Re: contemplating fresh hops in a brew
The hops get removed prior to fermenting.
Normally you would have have a hop strainer in your boiler to take care of that, but if not you can sieve them out.
One of the reasons you didn't get much response may have been the title of your post, it doesn't really reflect what the post is about.
I have personally never used fresh hops in a brew, and would not know where to get them from so the post wouldn't really be of interest to me, however being bored I thought I would have a read and what you were actually asking is for advice on a recipe for an extract brew using Malt Extract and Dried Hops.
Maybe mentioning fresh hops put a lot of people off as unless you grow your own I doubt many people have acccess to or have ever used them.
Hope the brew turns out well.
Steve

too late, they're in the FV along with the yeast.Runwell-Steve wrote:The hops get removed prior to fermenting.

Re: contemplating fresh hops in a brew
I would sanitise a kitchen sieve in dilute bleach for 1/2 hour, then rinse thoroughly under running water. Then pour your brew from one fv to another through the sieve. You don't want to be doing this when fermentation is complete because it will oxidise the beer. You need to aerate now to get yeast growth so now is the time to get the hops out.
Re: contemplating fresh hops in a brew
i should have thought of that
done now. thanks for everyone's input

Re: contemplating fresh hops in a brew
Those hops aren't dried, they're vacuum packed. My practise is to put them in muslin steeping bags (very cheap from homebrew shops online), and then to hold them above the pan to drain at the end of the boil. If you don't have a boiler with a false bottom, and like me don't want to strain 23 litres of wort, it's a good solution, and seems to work well.
