Bad egg?
Made a partial mash beer about 8 weeks ago and have been supping it and it's been fantastic. It really has been nice, exept today, when I opened one and it was really horribly bitter, not very nice to drink at all. I rushed to pour a 2nd to see if the entire batch had spoiled and the 2nd was really good again, have them side by side to, and SWMBO agrees that one is just a lot more bitter than the other. Any expaination?

Are you sure it is more bitter and not more sour? You may have stirred a little yeast up and tasting that as bitter. If it is sour, then possibly an infection in that particular bottle.

It is possible for one bottle not to have been washed, sanitized or otherwise cleaned as well as it should have, if it is only one bottle it might be some minor infection, bacteria or other that is in just that one bottle.
