Need a simple, step by step starter extract Recipie

Right, I've read loads, but now I think I've overshot and confused myself #-o

Can anyone provide me with, or point me in the direction of...a step by step guide (including a recipe) for an extract brew? Preferably I'd like to end up with somthing similar to Leffe. I'd like a guide that include quantaties of water starting amount and ending and ideal I'd like to end up with around 10 litres. And I'd prefer to use DME over LME for storage purposes and due the the amounts you can buy. (Ie, I want to brew smaller amounts, so don't want to crack open an 1.8kg LME can and only use half of it.)
Due to my current equipement it would have to be a partial boil.

Its nothing like leffe but here is a good one to get started. Just half all of the ingredients!

Yes, basically the above is what I'm after but I want a Leffe style as that's what the Missus drinks and I need to sweeten her up about all the beer brewing equipment I'm buying!

So, it's been an entire therefore the Missus has changed her mind and decided she would prefer a Hoegarden. That seems somewhat more complicated...

Hoegarden and Leffe are difficult to make. I recommend you try something simple, then when the technique is right move on. My SWMBO likes cider, so I just made 21 litre of Elderflower kit cider. Works a treat!

This is tasting magic right now, and the ladies love it. I did a partial boil for this no problem. As a wheat beer, it will be enough like a Leffe or Hoegarden to please the non-connoisseur. I guess you could halve this for your kit (and covert the later liquid addition to DME). It still has a lovely cloudiness to it and a lovely head to it that clings to the glass all the way down.

Put
500g pale spraymalt
500g wheat spraymalt (Munton's)
into
11.5 litres cold water in a 14 litre pot and bring to the boil.
t=60 min 1oz Hallertau
t=15 min 1oz Hallertau
t=5 min one 1.5kg tin of Burpaks premium grade wheat malt liquid extract
turn off the gas. that's it.

Cool it down in the bathtub and add to your FV. Top up to 20 litres using hot and cold water to keep it close to 20C.

Aerate wort, rehydrate yeart and pitch. I used Safale SO-4 as I had nothing else to hand, but there are specific yeasts like Danstar Munich or the WYeast 3068 Weihenstephen Weizen.

Warning: the unfermented wort was nasty, and I was worried, three days later it was still nasty and I was worried. But after three weeks in the primary (i got tied up) and a month in the bottles, it is great. It should be quite highly carbonated, and I was nervous about adding so much sugar to the bottling bucket but I triple checked my quantities. I have noticed that the carbonation is better now than at a month's bottle conditioning.

I am definitely making this again, but with a dedicated wheat beer yeast next time.
