Raspberry wheat beer

Post by brewjohn » Tue Feb 05, 2013 1:38 pm

I am not usually a fan of flavoured ales but my nephew gave me a bottle of his raspberry wheat beer and I quite liked it. He made his usual wheat recipe and when it hd been fermenting in the FV for 7 days he threw in 3 X 50 g packets of tesco frozen raspberries ( thawed out !) and let it go a few more days . has anyone tried otherways of flavouring it ie. concentrate ,cordials or even dare I say raspberry jam ! Just like to have a go at it.

Yeah, I'm not a huge fan of fruit beers, but I agree the basic basic wheat beer method plus fruit in the secondary method makes a nice refreshment. I've had raspberry, blackberry, blueberry, black cherry, peach, apricot, apple and maybe a few others. Since you know you like it, by all means go for it!

I like apricot the best. Since ale yeast produces an apricoty ester as it is, so it's an interesting way to amplify that natural aspect instead of turning it into a syrupy wine cocktail, if you know what I mean.

I think frozen or fresh fruit is the best way to go, although dried fruit would also work.
I did make some lemon extract to use in a beer recently. I used soraci ace hops to get lemon, but it faded away after nine weeks of lagering.
The only time I used a fruit flavoring was several years ago when I brewed a blueberry wheat for my son-in-law. I used frozen blueberries in the secondary and added just a bit of extract at bottling. I added a lttle bit, mixed it in and let him taste it until it was to his liking.
I'm just here for the beer.
