1.026 would you bottle?
Hi.
I brewed the Heiny recipie from Clone Brews on 13/07/2013. Kept forgeting to bottle it, now I have gone to do so and the FG is 1.026. It normally stops fermenting between 1.012 and 1.018 which I wouldn't worry about but this seems high.
I am pretty sure the fermentation has stopped. Should I bottle up?

What does it taste like?
If its ok, then yes, I would, but at 1026, that sounds very sweet so you might not like it and might want to consider trying to get it lower first.
I'd re-test to be certain on the SG and if happy with the taste, then package. Otherwise, I'd do things to encourage the yeast to finish its job....

How long's it been fermenting? It might need more time. Three weeks oughtn't harm it.
Also, how about fermentables you used might be an issue. I once added too much wheat malt. Things stopped fermenting at 1.020 but it was fine to drink.

Well I gave it a taste test and it seems okay so bottled up.

I would watch them bottles ( with safety goggles
) and check weekly! Liable to explode if fermentation starts up again

Thats my biggest fear. I just hope it had fermented out int 2 mths it was in the brew fridge.

What yeast did you use out of curiosity? I would try rousing those buggers if I were you and see if you can drop it down a touch, I would be wary of bottling that high.

Wyeasts 2042 Danish lager Ozzy. I let it sit at room temerature for three days prior to bottling and there wasn't even the slightest hint of fermentation.

I would give it a gentle stir and go from there .....hydrometer in hand of course

Get a cap opener and just apply enough pressure to lift the edge and see how much of a hiss you get. If you get a lot will you need to depressurise. They may not reach the exploding point but you'll serve only foam instead of beer.... You can bang the cap back down properly with your cappercellone wrote:6 days and no bombs so far. Turned out to be a sweet low % lager. Good flavour/aroma but the sweetness over rid this quickly, there is a little bite but not enough. Will put this down as a fail but none the wiser as to the reason
