Fermentation question.

In the middle of my first batch (Irish stout) and I'm trying to figure out when the fermintation is considered done.. Mind you patience is not my strong suit.

I made it all up last sunday, woke up Monday to bubbles in the airlock at about 1 per 5sec. Tuesday and Wednesday it was up to a buble per second or a hair faster,was looking good. Now it's down to a small bubble every 8-10..
Will bubbling completely stop? Is this a good time for me to put in the secondary and just wait a few more days? Needless to say I'm anxious to taste it and see it, but I don't want to hurt anything either.

Ok, I'm going to go check it right now then.. I've no wine thief so I have to test in the bucket. I'll just take a small amount with a sanitized cup to taste.
Also, would it be worth reclaiming the yeast for use in a wheat beer?
The next kit has undated yeast pouch. Or will this batch be the completely wrong yeast for it..?

Ok I opened the bucket and there still a 1/2 inch or so head on it with tons of green crap up the side of the bucket.. The hops I presume..
But based on how it looks I'll leave it a few more days before doing anything else.. Smells great tho. :D
