The problem with cake racks is that they don't tend to be made of stainless steel, brass or copper so in my view should be used with caution.

Not sure what mine is made of. It looks stainless and is, I imagine, food safe...
I suppose it doesn't matter what you use, but I would advocate a device to keep the bag from the element however it is acheived and regardless of it being a concealed element or not. Then again I don't have a sky hook, or a means of keeping the bag lifted should I wish to inject a bit of heat into the mash (missed strike temp/ poor insulation etc.)

Well... i thought i'd post a little update. I got the cygnet 30l and have just completed a test boil.
It took about 1 hour to get up to temperature, and then... it went NUTS!!!! Rolling boil? At Max setting it looked like a literal torrent of rolling boil madness! =)
No need at all to tinker with the thermostat, this urn is the schiznit! Time to order the bag and get some brews planned!!!

I have a Buffalo 40L urn (CC- 193) and can confirm that it is the "poodles privates". Very happy with the level of headspace, mega boil and thermostat is handy too. Well worth the money IMO, especially If you get a Nisbetts clearance one.
