I'm gathering all the bits I need to move from pressure barrels to Sankey kegs.

I've just about got the handle on keg connectors, pipework, and almost figured out regulators.... It's the final tap side that I'm puzzled by, does anyone have a preferred method of serving, I'm getting a bit lost with handpumps, perlick taps, flow control, etc, the prices seem to vary massively.... is there an easy guide to the different types somewhere on the interwebs?

Cheapest method would prob be a picnic tap, that's how I served beer all last year and it worked fine. I've now got a basic clamp on stainless bracket and a standard dalex tap which I am in the process of setting up. If you got your beer line length sorted then you don't need a flow control tap.

I see so perlick/ flow control allows for variances, as my kegs won't be temp controlled does that mean I'll benefit from a perlick tap... Meaning as the temp changes the condition will?

I would have said if you cannot keep constant control over the pressure or the temp you would benefit from using a flow control tap as you may end up with loads of foam when the keg warms up and CO2 comes out of solution.
