Now I know there is a limit to how highly carbonated a beer can be if will be stored/dispensed from a PB. For instance Lagers are usually considered too fizzy for a PB.
Does anybody know exactly (ok near enough) how many volumes a beer can be carbonated to and still be stored in a PB?

Based on a max pressure of 10 psi and a random carbonation chart off google*, you should be able to get up to about 1.8 volumes at 12C.

Yes, that sounds about right, and a tad more at cooler lager temperatures. Its worth mentioning that not all PBs are officially rated to 10PSI though, so take care. They generally do have a form of PRV, but these aren't always the most accurate of devices and so may allow excess. Or fail to compensate for the beer warming up, if you can't regulate the temperature.
BTW, there were some splits occurring in PBs a few years ago (king kegs?) at the mould line, apparently within the rated pressure, so possibly worth a few tests with water if you want to push towards limits
