I started using corny kegs a couple of months ago.
After fermentation I transfer with gelatine as finings and purge with CO2, then give a blast at about 3 bar.
I have noticed that I get very drinkable beer after only a few days. No doubt, if i leave it for 2 - 3 weeks it is better, but compared to the majority of commercial beer, it's not bad at all almost immediately.
So how long do you leave your beer to condition when you are force carbing with cornys?

Depends on gravity largely, possibly bitterness too, lower the gravity the earlier you can drink, earlier it is more bitterness perception.

I am just new to Corny's also and plan to lager a brew in them later in the week. I plan to let it age a few weeks minimum and I am toying with the idea of pressurising at 20-30 PSI to create a seal and then leave them without force carbonating for now. If I did store them in my temp control chest freezer at around say 1-3c I presume that the cold would lead to the co2 being absorbed. Would I just re-pressurise and if so how often?

conditioning is a fairly rapid process measurable in days, maturing however can take longer, weeks, or even months depending on gravity generally 
personal taste comes into it too what i may consider a green beer may taste mature to you..
if brewing 23l batches and use cornies its enlightening to bottle the excess after kegging and sample the bottles a few months after the kegs been emptied

I dont force carbonate.
I use the normal 1week for every 10.points though. As a rule a 1060 beer will ferment out, be kegged and carbonate (a week warm conditioning) then 5 or 6 weeks. This depends on if i have a tap free. I have 6 cornies and 5 taps.....
