Kev,

You're spot on in your reply, my preference would be for a much less carbonated beer. I've turned the fridge up and have vented the pressure down to 8PSI which should give me around 1.8 volumes if my guess at what the fridge temperature will settle out at is correct.

I've got an Ink Bird bluetooth hermometer monitoring the temperature inside the fridge. When it rises and plateaus I'll be able to set the pressure to where I really want it.

That would certainly be a much easier level of carbonation to deal with. Though if the current keg has been carbonated to a higher level than now wanted, keep in mind that it could take days of frequent venting before the beer sheds the extra. This can be speeded up greatly by shaking/rolling the keg in between ventings, but of course that may not be ideal if there is sediment in there too.
