What's the best temperature controller? STC1000 seems to be the way forward but happy for suggestions, please see my other post, couldn't delete this post!!

I’ve always used STC1000’s got all my keezers (I’ve build three & about to make another, I keep changing my mind) and never had a problem with them. If you don’t want to build the enclosure and wire it up then inkbird do controllers which work out of the box.

Do these just wire into the fridge circuitry? I think I've just blown mine? I got the 24v model is this correct or am I missing something? It lit up briefly then fried! The thermostat is only 3 amp and the fridge is 13 amp, I just thought I'd work!

It will do. I tend to wire up an STC in a box with either trailing sockets or sockets mounted to the box, one for heating and one for cooling. I plugged the freezer in to the cooling socket, obviously. No different to wiring it directly to the back oft the STC.

You need to remember that the STC-1000 is not supplying the current to drive the Freezer and heater.

Plenty of advice online as to how to wire up a STC-1000; I know cause I needed to find it when I did mine!
