Brewing gluten Free

I think I'm gonna need some expert help for my next batch.

The girls at work have just asked me to brew a gluten free beer for one of our colleagues who is celiac.

I've seen some kits available but wondering if anyone has any experience of actually brewing gluten free and is it possible to get a good beer?

I've brewed a few gluten free beers - also for a work colleague. The first was made using a sorghum extract from Brew UK and some gluten free oats. I brewed Seymours Citra Gold. It was drinkable - but there was something lacking... I would also advise leaving it at least 4 months to condition because after 1 month it was crap but it did get better and better over time. I put this down to the sorghum extract because normal citra gold is a great beer.

I also brewed a normal AIPA and then added some clarityferm enzyme (check out whitelabs or the malt miller). This is a PEP enzyme (prolyl endopeptidase) that was originally used as a clarifying agent (it cuts up proteins that cause haze) and that you add at the same time as the yeast. It supposedly breaks down almost all the gluten containing proteins. The beer was fantastic and you could do this with any normal beer that you brew.... My coeliac friend drank several bottles and had no issues and she loved the beer. I'll be using it again.

My wife is coeliac and we pay a fortune for tiny bottles of gf beer. The kits are very expensive and she doesn't drink that much but I'll definitely be looking into that enzyme thing.

I looked at ClarityFerm a couple of years ago, and there was a problem getting it into the country . . .Rob did sell it, then couldn't get it . . .it looks as though its available again . . .

The Malt Miller lists it but was out of stock when I wanted some a month or so back, but BrewUK had some. Dunno who else carries it.

I've got plans for a Faux Belgian Kriek . . . that I might very well bung some ClarityFerm in. With any luck it should turn out like Kasteel Rouge and my Coeliac OH loves Kasteel Rouge . . . . So do I for that Matter :D

Edit: ClarityFerm is back in stock at the malt miller

Have just bottled a clarity from brew. Though may be a while until my friend comes over to test it out.

For anybody into tinkering, I can recommend malting millet and all-graining with it. Get the roast right and the colour and flavour are spot on. Bit low in sugars but you can't have everything!
