Buttery/Nutty taste

Post by dabbles_a_bit » Sun Jan 13, 2008 4:12 pm

I have a strange taste in a few of my bottles of brewbuddy bitter, All were sanitised with sodium metabisulphite before brewing and bottling. the first 3 or 4 bottles were ok, the 5th had a buttery/nutty taste, the 6th was ok and i have just opened the 7th bottle and again it has this strange taste. I'm sure I have read on these forums in the past the cause of this, but for the life of me I can't remember what or where.
Can anyone help?

I have to say it isn't a rancid or unpleasant taste though.

Buttery is often attributed to diacetyl which can be caused by a number of things. Some of the beer spoilage bugs are prolific producers of diacetyl and it can also be caused by mistakes in your brewing process (too warm or not giving the yeast time to clear up after itself).

If it was a heat\yeast problem, wouldn't it affect all the bottles though? as it stands it is only 2 in 7 so far.
Unless of course the individual bottles have caused it, by me using sodium met, and it not sanitising effectively.

My guess is that individual bottles are infected - possibly with pediococcus. Are the dodgy beers 'slimey' in any way?

Not that I noticed, but they did taste thicker than normal, if that makes any sense :?
