I am about to try a Coopers bitter kit, but wish to modify the recipe!
I intend to do a mini mash to supplement the kit, this will be 200 grammes of cracked crystal malt grains with 20 grammes wheat malt and 25 grammes Goldings hops. I intend to steep these for around an hour at 60deg C.
I also wish to substitute the suggested 1 kg. of granulated sugar with non diastic liquid malt extract, then add to the kit with the mini mash and boil for about 10 minutes in 3 gallons of water.
So, 2 questions really,
Firstly, does this sound as though it will be OK?
and the second question is how much malt extract should I add to replace the 1 kg. sugar?
Supping: Brewmaker Victorian Bitter.
Fermenting 1 gallon Parsnip wine.

Thanks for your quick response, the wheat malt was intended to improve the head retention, how much do you think would be appropriate to steep in 200 grammes of cracked M.O.crystal?
Thanks for the info on malt extract/ sugar equivalents, I will do as you suggest on that one.
Brew day is scheduled for this Monday, so the next batch will be just about ready by the time I finish my Victorian bitter!
I will record everything I do this time, and if it comes good I will be able to repeat the process.
