First post! Hi all.
I've just started my first brew which sounds identical to the OP's. I just have one question which you guys might be able to help with...
The instructions suggest that after fermenting in the bucket, to transfer to another vessel for a couple of days before bottling. I don't have another vessel so was hoping to just transfer straight from my primary fermentation bucket to bottles - will this have any detrimental effect? Should I get a second bucket or just leave it in the primary one for a couple of days after fermentation has stopped?

Some people use campden tablets to clear the water of clorine/cloramines. I've never bothered with it (although I did buy some) and my beer is always good, maybe it would be outstanding if I used it...Hmm...

Re. the storing of hops, remove what you need, remove any excess air and zip lock/tie and store in the freezer 'till next use. If they smell "cheesey" they've gone off so get rid.

I've acquired all of the ingredients and will be giving this a bash once I finish off the batch I have on at the moment.
This will be about my 5th kit since I started at christmas and things are starting to snowball! So many ideas, I don't know in what order to implement them! :shock: :lol:
After making this I'll have two lots of 3.5oz of hops left over. What recommendations would you guys have for the left over hops? I have a scottish export kit to try after this one. Could you do a similar type of recipe with it?
All suggestions greatly appreciated!

Can I suggest that you use one of the weissbier yeasts (e.g. whitelabs 3068) - as I beleive these are essential if you want to get those clove & banana flavours going..

I've opened a few of these bottles now and it doesn't really taste anything like Hoegaarden to me. It does have a nice banana aroma to it but I'm struggling to drink it.
It did stop fermenting after about 4 days and the only way i could get it going again (I tried yeast vit and rousing) was to use the yeast that came with the coopers can. It carried on fermenting and I bottled it on about day 10.

Also I made up the priming sugar (well, I used LME and a small amount of candy sugar) and added it to a fermenting bin which I bottled the beer from, rather than priming individual bottles as I did last time...my beer is not totally flat, but there's not much life in it.
During fermenting I changed to a secondary fermenter and then to the bottling bin, meaning my brew is pretty clear...I'm wondering if I really wanted to do this?

So, I'm not very happy, I want to start again. I'm reluctant to pour my bottles down the sink to make room for a new batch, as it's drinkable...but only just.
I hope others had better luck than me :(

Whats making the taste off putting can I ask ? Is it tasteless or has it developed some background taste that isn't sitting very well ???

I just put my 2nd batch of this down last night. First batch I guessed at the weights and ended up with more goldings (styrian) and less Saaz but it was very tasty. This batch everything was alot more precise and I was more pleased with the batch.

For reference I used a NZ Black Rock Wheat Beer kit.

I've just had a nasal operation so my sense of taste isn't great. The fact it's a bit flat is off putting, I'm thinking the priming sugar wsn't mixed in well and maybe there'll be some bottles that go off like a rocket when I open them. If this is the case, can I crack them open, put a small amount of priming sugar in and put fresh caps on?
...I'll have a sup tonight and get back to you on what I don't like about the taste, I haven't tried it in a few days.

Just a quick note on my own findings when it comes to wheat beers.

I have found that if i use spray malt of any kind, wether its Light Spray Malt, Wheat Spray Malt or whatever, i find it upsets the balance of the can and ruins the 'wheat beer' flavour of the beer.

The only time ive done a wheat beer kit, which has come tasting of a wheat beer taste is when ive used only glucose. this ferments out and leaves a light feel, and to avoid the distastful overtones normally associated with all sugar kit brews then leave it for at least 4 weeks until they subside. this will leave you with a light beer, not too malty (i find that any extra malt in a wheat beer will kill the taste/balance of the brew) and with the desired signature taste in the mouth you expect from the wheat beers.

hope this helps, it probably will set the cat amongst the pidgeons.
