conditioning/ storing cornys

Post by beesley121 » Fri Jun 13, 2008 6:16 pm

hi guys,

im pretty new to this homebrew lark!!

when I keg my brew in my corny, in the winteer I left it in my house for the first 5 days to carbonate, then sat it outside in the cold then to clear and condtion for a month or 2.

problem now is that I have no where cold to put the corny so that is clears and conditions nicely!!

can you tell me if I left the corny in my garage (18 degress at present in the afternoon) would it clear and also can you tell me if the temp will make the beer go off

thanx

although conditioning is best done in a cool environment it is not necessary.

mine have always conditioned in the house which is 18+ degrees at all times.

I dont know what difference (if any) temperature makes to conditioning but I suspect that it will just be faster at a cooler temperature

Warmer makes the yeast work quicker (only while there's still fermentable sugars in the beer).

Cooler allows more CO2 to dissolve in the beer.

Which is why the advice typically given is to let it stand in the warm for 5 -7 days (to generate the CO2 ) and then move it to a cooler place (less than 16 C) to allow the gas to dissolve properly.

18C is a bit high (also a bit too warm to drink) but it should still clear and condition OK, and won't go off as long as you've sanitised everything thoroughly.
