Hi folks. I started a Brewferm Gallia kit a week ago and it started off like a rocket. The gravity had dropped from a 1.052 start to 1.025 after 2 days before steadying down to 1.018 after a week, today.
Although the notes give the starting gravity of 1.055, so I was a bit under, they dont give an indication of what the final gravity is supposed to be. Its suppposed to give a final alcohol strength of 5.5% vol so I guess if I was a clever chap and not such a begginer I would be able to work it out.
Any advise would be a big help as I am going away next Monday and really want to get it bottled for then.

My kit also went like a rocket at the start, down to 1020. Slowing dropped over the next few days and still going to 1014 - no activity in the airlock but i can see action and the lid on the FV is bulging a bit, not enough to push through the airlock - which i burp out every now and then to see the progress. Its only been in for about 9 days so a few days left before ill transfer to a secondary.
Its got light DME in it and three cubes of dissolved Belgian candy sugar in for minor experimentation purposes. Hopefully it might drop a point a day until Sunday and touch wood be ready to bottle if a little above target gravity.
Would it make it very gassy if it was bottled a touch early? I dont mind losing a bit of the alcohol as its quite a strongish brew anyway for me.
